CAULIFLOWER HUMMUS
Delicious paleo hummus that will make you proud to consume more vegetables
This recipe is an unbeatable option for people who like to enjoy the flavor of hummus without the negative effects of chickpeas, such as excess gas. You won't be able to tell the difference between this hummus and the chickpea hummus.
Ingredients
One cup of chopped cauliflower
One teaspoon of cumin seeds
1/2 cup onion (optional)
1/4 cup sunflower or pumpkin seeds
Two cloves of garlic
Three tablespoons of green lemon (you can use more juice to taste)
Four tablespoons of sesame seeds (more to taste)
1 - 2 tablespoons olive oil
Salt and black pepper (to taste)
One pinch of chili powder (optional)
Water
Instructions
Saute cauliflower, onion, and garlic.
Lightly roast the cumin seeds, sunflower seeds, and sesame seeds.
Place all ingredients in your food processor or blender, and blend until smooth (The consistency should be similar to mashed beans).
Serve it with vegetables or gluten-free cookies.
