Granola Bars
If you like energy bars, this is a better option than anything you can find in the store. This delicious recipe lowers Vata, can increase Pitta and increases Kapha. This bar is very nutritious. Therefore it will be enough to eat a little; always ask your body if you need more; in this way, you will not overload your digestive system. Adding cardamom and fennel will help make the bar easier to digest.
Ingredients
2 1/2 cups almond flour
2 cups pumpkin seeds
1/2 cup chopped walnuts
1/2 cup dates
1/2 cup grated coconut
1/4 cup sesame seeds
1/4 cup ground flaxseeds
1/2 teaspoon baking soda
1/2 teaspoon Himalayan salt
1/2 coconut oil
1/2 cup maple syrup
One teaspoon vanilla
One teaspoon of fennel (optional)
One teaspoon of cardamom powder (optional)
Instructions:
Preheat the oven to 350.
In one bowl, mix coconut oil, vanilla, and maple syrup, and in another, the dry ingredients.
Add the wet ingredients to the dry ingredients and stir well.
Grease a 9 X 13-inch pan with coconut oil.
Wet your hands and press the dough evenly into the pan.
Bake for 20 minutes.
Let cool in the pan for 2 hours, then cut and serve.
Refrigerate the bars to keep them solid.

***You can make your almond flour by grinding the almonds; this gives the bars a better consistency. You can also use half almond flour and half walnuts if you want the texture to be moister.
